This Asolo Prosecco DOCG ‘Col Fondo’ (With Sediment) was born from the desire to rediscover papà Emilio’s old technique in the production of Prosecco. From the selection of the grapes from our oldest vineyard and the maceration on skins for 18 hours, comes a base wine with strong personality and minerality. Then follows a second fermentation in the bottle in accordance with the traditional method but without disgorgement. The presence of yeast in the bottom of the bottle is indicative of genuineness and healthiness. When it comes to wine tasting COL FONDO is a pure expression of its territory: a nose of flowers, yellow fruit and bread crust with a deep mineral sense in the palate. We recommend gently turning the bottle upside-down 2-3 times before uncorking.
It should be served at temperature of 8-10°C.
